Hood Cleaning Standard

Commercial kitchen exhaust hoods must be cleaned on a schedule based on cooking volume: monthly for high-volume (24hr/solid fuel), quarterly for moderate, semi-annually for low-volume. Per NFPA 96 Table 12.4.

Suppression Inspection

UL-300 wet chemical suppression systems required. Semi-annual inspection and certification per NFPA 96. Systems must be serviced by a licensed C-16 contractor.

Los Angeles County Fire Department issues separate fire prevention permits. Kitchen suppression system certification must be current before health department will issue food facility permit.
