Commercial Kitchen Backflow Prevention
A backflow preventer stops contaminated water from flowing backward out of your kitchen and into the public drinking supply. Testing it every year, by a certified tester, is a legal requirement — and being able to prove the test happened is what keeps your water on. Here’s what it takes.
What it is
A backflow prevention assembly is the mechanical device that keeps water on your side of the meter from flowing back into the public supply. A commercial kitchen is a recognized cross-connection hazard — the connections at dish machines, sinks, and equipment can, under a pressure drop on the street, siphon contaminated water back toward everyone else’s drinking water.
The assembly is mechanical: springs weaken, valve seats erode, debris lodges in a check valve. A device can look fine and still fail to hold under reverse pressure — which is why it must be tested on a fixed cycle, not just installed and forgotten.
Who requires it: your water utility / local water authority (through a cross-connection control program under state drinking-water law) — and it’s a water-safety obligation the health inspector expects too. Your lease, and sometimes your insurance policy, may require it as well; a lease often assigns backflow testing for a restaurant tenant’s own kitchen connections to the tenant.
The annual test
Every year — by a certified tester
Most jurisdictions require every testable backflow assembly to be tested at least annually by a state-certified backflow tester, using calibrated gauges — plus a test after any installation, relocation, or repair. Some high-hazard assemblies are tested twice a year.

California’s State Water Resources Control Board, under its cross-connection control regulations, requires public water systems to run these programs and have backflow assemblies tested at least annually — but the exact form, interval, and deadline come from your local water authority.
The trap most kitchens fall into
A commercial property often has more than one backflow assembly — one on the domestic line, one on irrigation, one on the fire line, and one for the kitchen. Managers lose track of which device was tested when, and an unregistered or forgotten device won’t receive a due-date notice — it just generates a violation. The fix is an inventory: every assembly, its type, serial number, location, and last-test date.

The test only counts if you can show it was done, on time, by a certified tester. Utilities check the tester’s credential before accepting a report, and the common standard is to keep test records for at least three years.
