The fire side — the California Fire Code

The 2025 California Fire Code, built on the 2024 International Fire Code and in force since 1 January 2026, is enforced by the fire marshal. It pulls in five NFPA standards for the kitchen: NFPA 96 for the hood and duct, NFPA 17A for the suppression system, NFPA 10 for extinguishers, NFPA 25 for sprinklers and NFPA 72 for the alarm. Each one produces a record with a date on it.

The food side — CalCode

The California Retail Food Code, Health and Safety Code section 113700 and following, is enforced by 62 health departments — 58 counties and four cities — each with its own inspection form and its own grade card. It asks for the permit, the food protection manager certificate, the handler cards, the temperature logs and the pest control report.

Fire first, then food

The fire records have the shortest intervals, the strictest askers and the largest consequences. They are the ones a food safety app never holds.

  • Hood and duct cleaning certificate — NFPA 96 Table 12.4 sets the interval by cooking volume and equipment type: monthly for solid fuel, quarterly for charbroilers, woks, high-volume and 24-hour kitchens, semiannually for moderate volume, annually for low volume. That is your calendar, not a preference. Produced by the cleaning contractor, dated on the day of service.

  • Fire suppression service tag — NFPA 17A: semiannual service by a licensed contractor, tag on the system.

  • Portable extinguisher tags — NFPA 10: monthly visual check, annual maintenance tag.

  • Sprinkler inspection report — NFPA 25: quarterly and annual inspections by the sprinkler contractor.

  • Fire alarm test record — NFPA 72: annual test, semiannual visual, by a state-licensed alarm contractor.
