Numeric Scoring
Lewis County follows WAC 246-215, the Washington State Food Code. Inspectors use a numeric evaluation system where violations are categorized as red (critical, 5 points each) or blue (non-critical, 2 points each). Total points determine whether a facility receives a blue (satisfactory) or red (unsatisfactory) placard.
Point Deduction
Violations are scored by category and severity. Total points are published as the inspection score.

Hood Cleaning Standard
NFPA 96 Table 12.4 sets the interval by what the kitchen cooks: monthly for solid fuel, quarterly for high-volume cooking, semiannually for moderate volume, annually for low-volume or seasonal cooking.
